Whenever I try to launch CoffeeCup HTML Editor, I get an error message saying “Template Files Not Found” and it points to a missing directory: ...\Templates\Default. I checked the Templates folder and only see a ...\Templates\Modern directory. How do I restore or reconfigure the editor to find the correct default template files?

I've been searching for the templates folder you refer to without luck. Where on your computer is it?

Check your settings for the Editor startup. Open Tools -> Preferences, and there, on the first tab 'General', check the top left setting you have for Application Startup. If it says 'Open last open documents, try switching it to one of the other options and see if that rectifies the issue.

Have you tried uninstalling and reinstalling the app?
